Who Knew Vegan Food Could Be Tasty?

I did. So many people when they hear about someone following a vegan lifestyle ask the question, “Well, what do they eat?” They just assume that the food is all bland, and only consists of just fresh fruits and vegetables. Knowing someone who follows a vegan lifestyle has gotten me to come out of the box with my thinking and realize that ultimately they can eat most of the same things that people who don’t follow a vegan lifestyle eat with some modifications to make it plant based.

Nearly two years ago, I came across a recipe for some DoubleTree chocolate chip cookies so I tried them and shared them here: https://creshaslife.wordpress.com/2020/05/10/cookies-yum-and-happy-mothers-day/?preview=true. They were delicious, and my brother commented at the time about making a vegan version of them since they looked so good and he has been following a vegan lifestyle for the past few years. Because I don’t consider myself as a baker who can easily convert recipes to vegan, etc. I did not think it was something I could tackle; however, I still thought about it periodically. A couple of months ago while I was on my favorite app, Pinterest, lo and behold a Vegan DoubleTree chocolate chip cookie recipe popped up in my feed. I saved it and knew I would be trying it soon especially since I had recently purchased two different types of vegan chocolate chips. When I tried the recipe out, I doubled it. I also used half dark brown sugar and half light brown sugar. The milk I used was Chobani Oat Milk because it is a thicker milk unlike the almond milk I normally use. The chocolate chips I used were Enjoy Life dark morsels and Pascha organic dark chocolate chips-85% cacao bitter-sweet. I liked the Enjoy Life much better than the Pascha. I don’t like the chocolate with a higher level of cacao because it tends to be more on the bitter side, although I believe it’s healthier. If you can consume chocolate with the higher cacao content and like it, then you won’t have a problem with it. The cookies did not taste any different than cookies that are not vegan.

Cream cheese brownies

Brownies

My mom is a creator in many ways. She creates in the kitchen. She sews. She probably does many other things too. I believe I get my love for baking and cooking from her.

One dessert she created quite frequently is cream cheese brownies. I loved them growing up, and as an adult I’ve made them quite a bit. I don’t think they ever come out exactly the same, but they’re always tasty. Of course my first time trying them I had to call my mom and ask her about a recipe I found. I think it’s very similar to hers.

I hadn’t made these brownies in a few years. The last time I made them is when someone ordered a pan. Since I had a taste for some, I decided to make them. They are very quick and easy to throw together especially with an almost five month old at home who loves being held. I whipped them up during one of his catnaps.

The Love of Creating

This will be a short post today because it really doesn’t require too many words. If you know me, then you know I like to create in the kitchen. So, last weekend I made an eclair pudding. I hadn’t made one in years. I rushed to make it, and it didn’t look pretty, but it definitely tasted delicious. I wanted it to be simple, but of course when I opened up my container of cool whip for the first time, might I add, it was filled with mold. Thankfully I had just purchased a container of heavy whipping cream. I hate making my own whipped cream, but I did. It wasn’t as stiff as I wanted it to be, but the entire pan of eclair pudding was devoured.

I wanted a do-over this weekend since I’m such a perfectionist, but when I woke up this morning I decided I needed to do an Oreo cheesecake stuffed waffle cone instead. I went to my favorite place, Pinterest, and I found this https://letsdishrecipes.com/oreo-cheesecake-stuffed-waffle-cones/. The only ingredient I didn’t have were the waffle cones, and no I wasn’t going to make my own. I tweaked the recipe to use what I wanted. So instead of chocolate chips, I used butterscotch chips. By the way, I love butterscotch chips. I used Golden Oreo thins and lemon Oreo thins. The one great thing about a recipe is that you can always tweak it to suit your preferences.

Cookies…Yum, and Happy Mother’s Day

I really have been in the mood for some homemade cookies. I have not made any from scratch in years. For me, I’m always looking for the perfect recipe for anything I make because I want it to taste better than before. Well, I came across a recipe for some cookies called, DoubleTree Cookies from a blog called, The Little Kitchen.Net https://pin.it/3JzeC4V. The picture of the cookies just looked like they were going to be delicious. I decided that I would make them, and I did. I started at night, almost 8 pm to be exact. So, in the recipe, it tells you to refrigerate or freeze your cookie dough two to four hours or overnight. I figured overnight would be best since I had already gotten a late start. I definitely took the recommendation to go ahead and portion out the dough prior to refrigeration rather than trying to portion out hard dough. Literally all I had to do was pick up the individual portions, place them on the pan, and bake. That was simple enough.
